We are often asked about how to store coffee after roasting. The rule of thumb is to treat fresh roasted coffee like produce. We know that coffee is at its best 6 to 24 hours after roasting and that quality severely drops after a week. So how can we best preserve that?
Once your beans have cooled after roasting we find glass jars (mason jars etc.) to be the best storage. When you transfer your beans to a jar do not seal the lid but rather loosely lay the lid on top. During the first 12 hours there is quite a bit of Co2 being released from the beans. After about 6 to 12 hours seal the jar up.
